Food: Kirsty's Meals

I'm not the biggest fan of ready meals as I make most of my food from scratch but when I was asked to try Kirsty's range of healthy, chilled ready meals I was intrigued.

Kirsty's meals are free from gluten, wheat, dairy and added sugar and have been recognised by the globally successful 5:2 diet as the healthiest ready meal on the market. After reading this, I fancied trying them as occasionally I don't have time to prepare lunch to take to work and thought these meals could be a healthy alternative to pick up.

Thank's to Kirsty's natural food swaps, the meals are suitable for Coeliacs and as Coeliac Awarness week is in May (11th -17th) what better time to try these meals and share my thoughts on my blog.

The Kirsty’s range includes; Spanish Chicken with Brown Rice, Cottage Pie with Sweet Potato Mash, Moroccan Vegetables with Quinoa, Sausage with Sweet Potato Mash, Chicken Tikka Masala with Brown Basmati Rice, Thai Chilli Chicken with Rice Noodles and Beef Lasagne with a Rich Bolognaise Sauce.

I tried.......

Cottage Pie with Sweet Potato Mash
I took the meals to work and ate them in my lunch break as they were really convenient. All the meals are under 400 calories and I was very impressed with how tasty these all were. I enjoyed every single one of them but my favourite was the Chicken Tikka Masala with Brown Basmati Rice. I was also impressed with the ingredients as they didn't contain the usual additives like most ready meals.

The Kirsty's range is the only brand of ready meals that's free from gluten, wheat and dairy in UK Supermarkets and can be purchased in Sainsbury’s, Waitrose, Ocado, Budgens and Asda priced at £3.00.

(*The meals were sent to as a PR sample)

Food: Butter and Dark Chocolate Brownies

I feel like I've had quite a productive weekend, as well as having a spring clean and decorating my bathroom, I made peanut butter and dark chocolate brownies, check me.

If you fancy trying these out for yourself you can find the recipe below. Saying that, I never really follow recipes, I just guess the measurements, throw it all in and hope for the best.

Ingredients

100g Dark Chocolate
115g Crunchy Peanut Butter
75g Butter
100g Brown Sugar (I used white as I didn't have brown)
1 egg (beaten)
115g Self Raising Flour
1 Tea Spoon Vanilla Extract

Method
  • Preheat the oven to 180C/gas mark 4 and line a baking tray with baking paper.
  • Mix the butter, peanut butter and sugar until it forms a paste like texture, then add in the beaten egg and vanilla extract and mix all together.
  • Melt the chocolate, then pour in to mixture adding the flour at the same time and mix together.
  • Spoon out the mixture on to the baking tray and spread out evenly to the edges.
  • Bake in the oven for 12 minutes and then leave to cool for 5 minutes.

Lifestyle: Home Accessories

So I have a new obsession.... home decor. Since I've started looking at house's and thinking about selling my flat, I have been thinking of ways to add value, without spending too much money.

I have been doing it room by room and so far only got as far as the living room and the hall. As well as fitting new carpets and giving the place a fresh lick of paint, I have been adding wee accessories here and there.

Here are few items I picked up this week in Primark, £4.50 for all three. Total bargain if you ask me.

I then headed to Cath Kidston to pick up some free wall paper samples to add into my small picture frame from Primark and to add to a lovely picture frame my friend had given me as birthday gift.

Before
This was mega cheap (well free) and easy to do. I just cut around the heart shape templates from the frame and added in the wall paper.
